Title: Three Cheese Potato Fluff

Yield: 5 Servings

1/2 Bag Ore-Ida mashed potatoes
  Prepared
3/4cMilk
1/2cSwiss cheese -- shredded
1/4cParmesan cheese
3/4cSharp cheddar cheese --
  Shredded
3lgScallions
1/4cOnion -- chopped
1tsSalt
1/2tsFreshly ground pepper
3lgEggs -- separated

Preheat oven to 375=B0. Add milk to the prepared potatoes, cheeses, scallions, onions, salt and pepper and egg yolks. Mix together thoroughly until well blended. In a small bowl with mixer on high speed, whip the egg whites until stiff peak form. Gently fold beaten egg whites into mashed potato mixture. Spoon the mixture into a greased 3" deep casserole dish. Bake about 50 minutes, or until puffed and golden.
